VEGAN TRINIDAD POTATO AND CHICKPEA CURRY WITH ROTI RECIPE
Trini Channa and Aloo (chickpea and potatoes) is one of our favourite curries ever! It’s so easy to make, especially if you have the green seasoning pre-made in your fridge. This curry is great with rice dishes but is especially good with roti. Try making your own Buss Up Shut Paratha Roti to eat with this amazing dish! Ingredients 5-6 medium potatoes 2 cups cooked chickpeas 1/2 cup sliced onions 1/4 cup green seasoning 1 1/2 cups water 2 tsp madras curry powder 1 tsp turmeric powder 1/2 tsp amchar masala (optional but very good if you can find it) 1/2 tsp ground roasted geera (optional but also very good if you can find it) 1 tsp salt or to taste Green Seasoning* 1 packed cup cilantro 1 rib of celery 4-5 green onions 1 small onion 5-6 cloves of garlic hot pepper of your choice (adjust to taste- we used 1 whole scotch bonnet pepper, this makes a pretty spicy green seasoning) *This recipe makes a larger quantity of green seasoning than needed. It stores very well in the fridge in a jar or airtight container for up to 3 weeks or freeze in ice cube size portions for up to 3 months.
